  • 12 Medjool dates, pitted
  • 1/4 cup Peanut butter
  • 1/4 cup Roasted peanuts, chopped
  • 4 oz Dark chocolate, melted
  • 1 teaspoon Coconut oil (optional, for melting chocolate) for smoothness
  • to taste Sea salt (optional)

Method
 

  1. Slice each date lengthwise, without cutting all the way through.
  2. Fill each date with peanut butter.
  3. Sprinkle chopped peanuts over the peanut butter.
  4. Melt dark chocolate with a teaspoon of coconut oil (if needed for smoothness).
  5. Dip each stuffed date into the melted chocolate, ensuring it's fully coated.
  6. Place the chocolate-covered dates on parchment paper.
  7. Sprinkle with sea salt (optional).
  8. Refrigerate for at least 30 minutes to allow the chocolate to set.
  9. Enjoy!

Notes

For a vegan option, use vegan dark chocolate.
