Crockpot Shepherd’s Pie

Ingredients
  

Meat Mixture
  • 1.5 lbs ground beef or lamb
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
Mashed Potato Topping
  • 4-5 large potatoes peeled and cubed
  • 1/2 cup milk or cream
  • 2 tbsp butter
  • Salt and pepper to taste (for mashed potatoes)

Method
 

  1. Brown the ground beef or lamb in a skillet. Drain excess grease.
  2. Transfer the browned meat to the crockpot.
  3. Add the chopped onion, carrots, and celery to the crockpot.
  4. Stir in thyme, rosemary, beef broth, peas, corn, and Worcestershire sauce.
  5. Season with salt and pepper to taste.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Boil potatoes until tender. Drain and mash with milk/cream, butter, salt, and pepper.
  8. Spread mashed potatoes over the meat mixture in the crockpot.
  9. Cover and cook on high for 30 minutes to heat through.
  10. Serve hot and enjoy!

Notes

For a richer flavor, use lamb instead of beef. You can also add other vegetables like mushrooms or green beans.
