  • 3-4 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 large onion, chopped
  • 2-3 carrots, peeled and chopped
  • 2-3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf bay leaf
  • 1.5 lbs potatoes, peeled and quartered

Method
 

  1. Season the beef roast with salt and pepper.
  2. Heat olive oil in a skillet and sear the roast on all sides until browned.
  3. Place onion, carrots, and celery in the bottom of the crockpot.
  4. Place the seared roast on top of the vegetables.
  5. Add garlic, beef broth, Worcestershire sauce, thyme, and bay leaf to the crockpot.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until tender.
  7. Add the potatoes during the last 2-3 hours of cooking time.
  8. Remove the bay leaf. Shred the beef with two forks.
  9. Serve hot with the vegetables and cooking liquid.

Notes

For a thicker gravy, mix cornstarch with cold water and stir into the cooking liquid during the last 30 minutes of cooking.
