Method
- Season the beef roast with salt and pepper.
- Heat olive oil in a skillet and sear the roast on all sides until browned.
- Place onion, carrots, and celery in the bottom of the crockpot.
- Place the seared roast on top of the vegetables.
- Add garlic, beef broth, Worcestershire sauce, thyme, and bay leaf to the crockpot.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until tender.
- Add the potatoes during the last 2-3 hours of cooking time.
- Remove the bay leaf. Shred the beef with two forks.
- Serve hot with the vegetables and cooking liquid.
Notes
For a thicker gravy, mix cornstarch with cold water and stir into the cooking liquid during the last 30 minutes of cooking.
