Method
- Season the chuck roast with salt and pepper.
- Sear the chuck roast on all sides in olive oil until browned.
- Place onion, garlic, carrots, and potatoes in the Crock Pot. Lay the roast on top.
- Pour in beef broth and Worcestershire sauce. Add optional ingredients.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours.
- Check for doneness; the roast should be fork-tender.
- Remove roast and veggies. Rest, then slice or shred before serving.
Notes
For a thicker sauce, remove some of the cooking liquid after cooking and thicken it with a cornstarch slurry before serving.
