  • 3-4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 3-4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • Fresh herbs (like thyme or rosemary), optional optional
  • 1 cup red grape juice (for a richer sauce, optional) optional
  • 2 tablespoons tomato paste (optional) optional
  • 1 teaspoon dried thyme (optional) optional
  • 1 teaspoon dried rosemary (optional) optional

Method
 

  1. Season the chuck roast with salt and pepper.
  2. Sear the chuck roast on all sides in olive oil until browned.
  3. Place onion, garlic, carrots, and potatoes in the Crock Pot. Lay the roast on top.
  4. Pour in beef broth and Worcestershire sauce. Add optional ingredients.
  5. Cover and cook on low for 8-10 hours or on high for 4-6 hours.
  6. Check for doneness; the roast should be fork-tender.
  7. Remove roast and veggies. Rest, then slice or shred before serving.

Notes

For a thicker sauce, remove some of the cooking liquid after cooking and thicken it with a cornstarch slurry before serving.
