Potatoes
  • 2 lbs potatoes, peeled and diced
  • 1/2 cup mayonnaise
  • 2 tbsp mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 2 hard-boiled eggs chopped eggs
  • 1 tbsp vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika

Method
 

  1. Boil potatoes until tender, then drain and cool.
  2. Mix mayonnaise, mustard, vinegar, salt, and pepper in a large bowl.
  3. Add potatoes, celery, onion, and eggs; gently stir to coat.
  4. Sprinkle with paprika before serving.
  5. Chill for at least 1 hour before serving.
