Ingredients

  • 1 piece 10-12 lb turkey breast, thawed
  • 2 cups fresh cranberries
  • 1 cup orange juice
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 tablespoon grated orange zest
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • as needed fresh herbs (like thyme and rosemary) for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook cranberries, orange juice, brown sugar, honey, orange zest, and cinnamon until thickened, then cool.
  3. Pat turkey dry, season with salt and pepper, brush with olive oil, and roast for 2 hours, basting with half the glaze.
  4. During last 30 minutes, remove foil and brush with remaining glaze. Rest before slicing.
  5. Garnish with herbs and serve with extra glaze.

Notes

Use fresh herbs for best flavor and ensure the turkey reaches 165°F (75°C) internally.
