  • 1 cup cottage cheese (full-fat recommended, but low-fat works too)
  • 1 large egg egg (optional, for better binding)
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon smoked paprika
  • 2 tablespoons grated Parmesan cheese (optional add-in)
  • 0.5 teaspoon dried herbs (oregano, thyme, rosemary) (optional add-in)
  • 1 tablespoon nutritional yeast (for extra cheesy flavor) (optional add-in)
  • 0.25 teaspoon chili flakes (for heat) (optional add-in)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Drain excess moisture from cottage cheese by placing it in a strainer for 15 minutes.
  3. Mix cottage cheese, egg (if using), and seasonings until well combined. Add Parmesan or nutritional yeast if desired.
  4. Scoop mixture onto the prepared baking sheet, flatten to about 0.2 inches thick, and space 1-2 inches apart.
  5. Bake for 20-30 minutes until golden brown. Flip halfway if desired for extra crispiness.
  6. Cool on the baking sheet for 10-15 minutes to crisp up before serving or storing.

Notes

For extra crispiness, flip the chips halfway through baking.
