Ingredients
  

Eggs
  • 6 large eggs hard-boiled
  • 0.25 cup mayonnaise adjust to taste
  • 1 teaspoon yellow mustard or Dijon
  • 1 teaspoon lemon juice optional
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika optional
  • 2 tablespoons celery finely chopped
  • 1 tablespoon red onion finely chopped, optional
  • 1 tablespoon fresh chives or parsley chopped, for garnish
  • 4 slices bread white, wheat, rye, or your choice
  • 2 leaves lettuce optional
  • 1 small tomato sliced, optional

Method
 

  1. Hard-boil the eggs, then peel and chop them.
  2. Mix chopped eggs with mayonnaise, mustard, lemon juice, salt, pepper, and paprika.
  3. Stir in chopped celery, red onion, and herbs. Mash lightly and adjust seasoning.
  4. Toast bread slices if desired. Assemble sandwiches with lettuce, egg salad, and tomato slices.

Notes

For extra flavor, try adding a dash of hot sauce or paprika on top.
