Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 tablespoon sugar (for cinnamon swirl)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  2. Mix mashed bananas and melted butter. Add baking soda, salt, sugar, egg, and vanilla; stir well.
  3. Stir in flour until just combined. Mix cinnamon and sugar for swirl.
  4. Pour half batter into pan, sprinkle half cinnamon-sugar. Repeat with remaining batter and topping.
  5. Swirl batter gently. Bake 60-65 minutes. Cool before slicing.

Notes

For best results, use ripe bananas and do not overmix the batter.
