Method
- Preheat oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
- Mix mashed bananas and melted butter. Add baking soda, salt, sugar, egg, and vanilla; stir well.
- Stir in flour until just combined. Mix cinnamon and sugar for swirl.
- Pour half batter into pan, sprinkle half cinnamon-sugar. Repeat with remaining batter and topping.
- Swirl batter gently. Bake 60-65 minutes. Cool before slicing.
Notes
For best results, use ripe bananas and do not overmix the batter.
