Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
Wet ingredients
  • 2/3 cup granulated sugar or packed brown sugar
  • 4 tablespoons unsalted butter, softened
  • 2 large eggs room temperature
  • 1.5 cups mashed ripe bananas about 3 large or 4 medium
  • 1/3 cup plain Greek yogurt or sour cream
  • 1 teaspoon pure vanilla extract
Cinnamon sugar for swirl
  • 1/4 cup granulated sugar
  • 1.5 teaspoons ground cinnamon
Icing
  • 1/2 cup confectioners’ sugar, sifted
  • 1 tablespoon heavy cream or milk
  • 1/4 teaspoon pure vanilla extract

Method
 

  1. Preheat oven to 350°F (177°C) and grease a loaf pan.
  2. Mix dry ingredients; cream butter and sugar, then add eggs, bananas, yogurt, and vanilla.
  3. Combine wet and dry; swirl cinnamon sugar into batter and layer in pan.
  4. Bake for 55–65 minutes; cool, then drizzle with icing.

Notes

Use ripe bananas for best flavor and sweetness.
