Ingredients

  • 1 cup canned pumpkin
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, sugar, oil, and eggs until combined.
  3. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet, fold in nuts if using.
  5. Pour batter into pan and bake 60-70 minutes until a toothpick comes out clean.
  6. Cool in pan 10 minutes, then transfer to wire rack to cool completely.
