Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix pumpkin, sugar, oil, and eggs until combined.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet, fold in nuts if using.
- Pour batter into pan and bake 60-70 minutes until a toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
