Caprese Salad with Balsamic Reduction

Ingredients
  

Dairy
  • 16 ounces fresh mozzarella cheese (sliced)
  • 3-4 pieces vine ripe tomatoes (sliced)
  • cup fresh basil leaves
Seasonings & Oils
  • flaked sea salt flaked sea salt
  • ground pepper ground pepper
  • drizzle olive oil olive oil
  • 1 cup balsamic vinegar
  • 1 tablespoon allulose confectioners (optional)

Method
 

  1. Combine balsamic vinegar and allulose in a saucepan and simmer on low for 12-15 minutes until reduced by half.
  2. Wash and slice tomatoes and mozzarella; prepare basil leaves.
  3. Arrange tomato slices on a plate, layering mozzarella and basil in between.
  4. Drizzle with olive oil, season with salt and pepper, then cool balsamic reduction and drizzle over the salad before serving.
  5. Store leftovers in airtight containers in the fridge.
