Butter
  • 1/2 cup unsalted butter
Sugars
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
Fruits and vegetables
  • 2 large ripe bananas, mashed
  • 1/2 cup pumpkin puree
Eggs and vanilla
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Nuts (optional)
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Melt butter over medium heat until golden and nutty; cool slightly.
  3. Mix brown butter, sugars, bananas, pumpkin, eggs, and vanilla.
  4. Whisk dry ingredients and combine with wet mixture; fold in nuts if using.
  5. Pour batter into pan, bake 60-70 minutes, cool before slicing.

Notes

For extra flavor, toast the nuts before folding in.
