Ingredients
  

Butter and Eggs
  • 0.5 cup butter or margarine, softened (1 stick)
  • 1 cup mashed ripe bananas (2-3 bananas)
  • 3 eggs eggs
  • 1 box Betty Crocker Gluten Free yellow cake mix
  • to taste chopped nuts (if desired)

Method
 

  1. Cream butter, then add bananas and eggs.
  2. Mix well until combined.
  3. Add cake mix and nuts, then blend thoroughly.
  4. Pour batter into a greased 9" x 5" loaf pan.
  5. Bake at 350°F (175°C) for 55-60 minutes until a toothpick comes out clean.
  6. Cool for 5 minutes, then transfer to a rack to cool completely.

Notes

Use ripe bananas for best flavor and sweetness.
