Ingredients
  

Protein
  • 3-4 pieces boneless, skinless chicken breasts
  • 1 cup barbecue sauce
Vegetables
  • 6 cups chopped romaine lettuce
  • 1 cup sliced cucumbers
  • 1 cup halved cherry tomatoes
  • ½ cup thinly sliced red onion
Cheese & Dressing
  • 1 cup shredded cheddar cheese
  • ½ cup ranch dressing

Method
 

  1. Preheat grill to medium-high. Season chicken and grill for 6-8 minutes per side.
  2. Brush chicken with barbecue sauce and grill for 1 more minute per side. Rest and slice into strips.
  3. Combine romaine, cucumbers, tomatoes, red onion, and chicken in a large bowl.
  4. Top with cheddar cheese and drizzle with ranch dressing; toss gently.
  5. Serve immediately.

Notes

Grilling the chicken adds smoky flavor; feel free to add more vegetables for extra crunch.
