Banana Muffins No Eggs

Ingredients
  

Main
  • 2 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas and melted coconut oil.
  3. Add sugar and vanilla, stir well.
  4. Combine dry ingredients and fold into wet mixture.
  5. Fold in walnuts or chocolate chips if desired, then divide batter into muffin cups.
  6. Bake for 18-20 minutes, cool before serving.

Notes

Use ripe bananas for best flavor and sweetness.
