Ingredients
  

Bananas
  • 0.33 cup melted butter slightly cooled
  • 0.5 cup sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1.5 cups all-purpose flour
Optional mix-ins
  • chocolate chips, chopped walnuts, or cinnamon as desired

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mash bananas, mix with melted butter, then add sugar, egg, and vanilla.
  3. Add baking soda and salt, then fold in flour and optional mix-ins.
  4. Scoop batter into muffin cups, filling ¾ full. Bake 20–25 minutes.
  5. Cool muffins in pan for 5 minutes, then transfer to wire rack.

Notes

Use ripe bananas for best flavor and sweetness.
