Method
- Preheat oven to 350°F (175°C) and line muffin tin.
- Mash bananas, mix with melted butter, then add sugar, egg, and vanilla.
- Add baking soda and salt, then fold in flour and optional mix-ins.
- Scoop batter into muffin cups, filling ¾ full. Bake 20–25 minutes.
- Cool muffins in pan for 5 minutes, then transfer to wire rack.
Notes
Use ripe bananas for best flavor and sweetness.
