Dough
  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk, warmed about 110°F
  • 2 1/4 teaspoons active dry yeast 1 packet
  • 2 large eggs
  • 4 cups all-purpose flour plus more for dusting
  • 1 teaspoon salt
Filling
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 2 teaspoons ground cinnamon
Icing
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Method
 

  1. Activate the yeast: combine warm milk with a pinch of sugar, sprinkle yeast, and let sit until foamy, about 5-10 minutes.
  2. Prepare the dough: mix mashed bananas, sugar, melted butter, and eggs; add yeast mixture, then gradually incorporate flour and salt. Knead until smooth, about 5-7 minutes.
  3. Let the dough rise: place in a greased bowl, cover, and let double in size, about 1-2 hours.
  4. Roll out the dough, spread cinnamon filling, roll tightly, and cut into 12 slices. Arrange in a greased dish.
  5. Second rise: cover and let puff for 30-45 minutes. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden.
  6. Make the icing: beat cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over warm rolls before serving.
