Ingredients

  • 2 pieces ripe bananas, mashed
  • 2 cups almond flour
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas, eggs, honey, and vanilla in a bowl.
  3. Combine almond flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add dry ingredients to wet, mixing until just combined. Fold in nuts or chocolate chips if desired.
  5. Spoon batter into muffin tin, about 3/4 full. Bake for 20-25 minutes.
  6. Cool muffins in tin briefly, then transfer to wire rack to cool completely.

Notes

Store in an airtight container for up to 3 days or freeze for longer storage.
