Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix mashed bananas, eggs, honey, and vanilla in a bowl.
- Combine almond flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to wet, mixing until just combined. Fold in nuts or chocolate chips if desired.
- Spoon batter into muffin tin, about 3/4 full. Bake for 20-25 minutes.
- Cool muffins in tin briefly, then transfer to wire rack to cool completely.
