Ingredients
  

Fruits
  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1 cup water
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, softened
  • 2 eggs eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chopped nuts optional
  • 1/2 cup coconut flakes optional
For Serving
  • 1 cup whipped cream for serving
  • 1/2 cup cranberry sauce for serving

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook water and sugar until boiling, then add cranberries and simmer until they pop. Cool.
  3. Mix butter, brown sugar, eggs, and vanilla until creamy.
  4. Combine dry ingredients and add to wet mixture. Fold in cranberries and nuts or coconut if using.
  5. Pour batter into a greased dish and bake for 25-30 minutes. Cool before serving.

Notes

For added flavor, sprinkle with extra nuts or coconut flakes before baking.
