Method
- Preheat oven to 350°F (175°C).
- Cook water and sugar until boiling, then add cranberries and simmer until they pop. Cool.
- Mix butter, brown sugar, eggs, and vanilla until creamy.
- Combine dry ingredients and add to wet mixture. Fold in cranberries and nuts or coconut if using.
- Pour batter into a greased dish and bake 25-30 minutes. Cool before serving.
Notes
For extra flavor, add a sprinkle of cinnamon or nutmeg to the batter.
