Method
- Preheat oven to 350°F (175°C).
- Cook water and sugar until boiling, then add cranberries and simmer until they pop. Cool.
- Mix butter and brown sugar, add eggs and vanilla. Combine with dry ingredients, then fold in cranberries and nuts or coconut.
- Pour batter into a greased dish and bake for 25-30 minutes. Cool before serving.
- Serve with whipped cream and cranberry sauce on the side.
Notes
For a richer flavor, toast the nuts before adding.
