  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows (optional, for topping) for topping

Method
 

  1. Preheat oven to 350°F (175°C). Mix sweet potatoes, sugar, and butter until smooth.
  2. Add milk, eggs, vanilla, cinnamon, nutmeg, and salt; mix well.
  3. Pour into a greased baking dish and top with marshmallows if desired.
  4. Bake for 30-35 minutes until set and lightly browned.
  5. Let cool slightly before serving.

Notes

For a richer flavor, use roasted sweet potatoes.
