  • 1 tablespoon Clarified Butter, Ghee, or Olive Oil
  • 5 pound Chuck Roast
  • Salt and Pepper to taste
  • 3 cups sliced Baby Bella or Crimini Mushrooms
  • 1.5 cups finely diced Red Onion
  • 6 cloves fresh Garlic sliced thin
  • 1 large sprig fresh Rosemary leaves removed and chopped finely
  • 1 sprig fresh Thyme leaves removed
  • 1.5 cup Dry Red grape juice
  • 2 tablespoons Balsamic Vinegar
  • 1.5 cup Beef Stock or Beef Bone Broth
  • 2 Bay Leaves
  • 0.25 cup cold Water
  • 2 - 4 tablespoons Cornstarch*

Method
 

  1. Cut fat off roast, pat dry, and season with salt and pepper.
  2. Sear roast in Instant Pot on saute mode until browned on each side; remove and set aside.
  3. Saute onions until tender.
  4. Add mushrooms and saute until tender and liquid is released.
  5. Add garlic, rosemary, and thyme; stir until fragrant.
  6. Add red grape juice and balsamic vinegar; simmer for 10 minutes.
  7. Add beef broth and stir to combine.
  8. Transfer roast and drippings to Instant Pot; add bay leaves.
  9. Pressure cook on high for 75 minutes, then natural release for 15-20 minutes, followed by quick release.
  10. If roast is tough, add another 15 minutes of pressure cooking.
  11. Remove roast and set aside.
  12. Whisk cornstarch and water together; stir into Instant Pot.
  13. Turn to saute and cook until thickened.
  14. Season with salt and pepper to taste. Serve gravy alongside roast.

Notes

For a richer flavor, marinate the chuck roast overnight before cooking.
